Breakfast Bar Recipe
Makes 12 bars | ~67 calories per bar
Ingredients
- 1 cup raw carrots (shredded or chopped)
- 1 cup cucumber (chopped)
- 1 cup apple (chopped)
- 1 cup melon (chopped)
- 3/4 cup Stevia (or to taste)
- 1/2 cup unsweetened almond milk
- 1 Tbsp flaxseed
- 1 tsp chia seed
- 1 cup blueberries
- 1 egg
- 2 scoops Vital Proteins collagen powder
- 1 Tbsp cinnamon
- 1 tsp nutmeg
- 1 tsp ginger
- 1 Tbsp vanilla extract
- 2 cups old-fashioned oats
Instructions
1. Preheat oven to 350 F (175 C) and grease a 9x13 jelly roll pan.
2. In a high-powered blender (Ninja or Vitamix), blend all ingredients until smooth and well
combined.
3. Pour mixture into the prepared pan and spread evenly.
4. Bake for 20-35 minutes until set. For a crispier texture, bake slightly longer.
5. Cool, cut into 12 bars, and enjoy!
