Getting back to basics is all about filling your life with wholesome food that is fun to grow, harvest, and eat.
Today’s post is all about beets. The superfood is delicious and easy to grow. If you are a novice gardener like myself, I found growing beets from seed relatively easy. They did not require anything special, just dirt, water, and sunshine. So, I thought I would share a couple recipes and the super nutrients you can ingest while consuming this wondrous goodness.
Let me get back to the basics, first the benefits of consuming beets. Studies show that beets provide antioxidants, are anti-inflammatory, aid in detoxification, and have carotenoids (lutein/zeaxanthin) to promote eye health. However, carotenoids are found mainly in beet greens. Bonus, not only can you enjoy the root of the beet but also the green tops. By consuming 1 cup, you will be provided over 275 micrograms of lutein/zeaxanthin for eye health.
Most significant benefits: consume the beetroot and greens, receive a power pack punch of nutrients, and save money. Of course, it costs you time, but think of the other benefits of growing your own beets: completely organic, no added preservatives, non-GMO, better tasting, you get exercise from all the digging and de-weeding, and bonus vitamin D from being out in the sun.
